From Grove to Glass: Four Seasons of Care
Spring Harvest
As temperatures rise, sugar maple sap begins to flow. Our partner growers use traditional tubing systems and vacuum technology to collect pure sap without additives or contaminants. The season lasts only 4-6 weeks.
Boiling & Concentration
Sap is boiled down at carefully controlled temperatures to concentrate the natural sugars. This ancient process requires skill and precision — one degree too high affects the final flavor profile. Everything is done on-site at each grove.
Testing & Quality Assurance
Our team tastes every batch and conducts laboratory analysis for purity, moisture content, and mineral composition. Only products meeting our exacting standards proceed. Failed batches are repurposed responsibly, never wasted.

Our operations are headquartered in the heart of Ginza, one of Tokyo's most discerning commercial districts. This location was chosen deliberately — it places us close to Japan's most demanding culinary professionals: Michelin-starred restaurants, artisanal patisseries, and specialty grocers who expect uncompromising quality.
From our Tokyo base, we manage importing, quality assurance, customer relations, and distribution to clients throughout Japan. The proximity to these influential food professionals keeps us constantly inspired and accountable. They push us to maintain the highest standards, and in return, we provide them with maple products they can stand behind unconditionally.
We also maintain close ties with maple producers on both sides of the Atlantic through regular grove visits, seasonal tastings, and long-term supply agreements that ensure fair compensation and mutual prosperity.
